Gluten-free, Sugar-free Gingerbread by GF Mom Certified, Tiffany Hinton

Gluten-free is a common dietary need both in the allergen and autoimmune disease communities. Researchers estimate that 32 million Americans have food allergies, including 5.6 million children. It is easy to see the effects of the allergen-sensitive community as local grocery stores are expanding their offerings of food that’s free from common allergens like milk, wheat and nuts. However, many families feel lost at home when trying to cook for these special diets, especially when cooking for guests.

During the holiday season, it has always been a family tradition of ours, to make allergy-safe cookies and put plates together to share with the neighbors and community. This tradition is something that started with my grandmother, cousins and me. We would all spend a week in my grandmother’s kitchen making hundreds of cookies. These gingerbread cookies hold a special place in my family’s heart and I hope you can enjoy them too.

Gluten-free, Sugar-free Gingerbread


Ingredients


2 1/2 cups Namaste Foods Perfect Gluten Free Flour
1 1/2 tsp ground cloves
2 Tbs ground cinnamon
2 Tbs ground ginger
3/4 tsp baking soda
1 stick butter or dairy-free alternative
1/2 cup ground dates OR 3/4 cup maple sugar
1/2 cup coconut milk
4 Tbs honey

Directions


Preheat oven to 400 degrees.  Line two baking sheets with parchment paper.

In a saucepan, cook the butter, maple sugar or ground dates, coconut milk and honey at low heat until butter has melted and the sugar has dissolved.  Remove from heat and pour into a heat resistant mixing bowl.  Let cool for a few minutes.

In another bowl mix together gluten free all-purpose flour, cloves, cinnamon, ground dates, ginger and baking soda.  Add to the sugar mixture and mix until combined.  
Flatten the dough onto prepared baking sheet.  

Cover with plastic wrap and refrigerate for at least 2 hours.

Roll the dough out to about 1/8 inch thick and cut into shapes. Transfer to another prepared baking sheet.  Bake for 10 minutes or until golden brown.
